The quintessential Brazilian cocktail. Its fresh fl avour reminds us of gentle tropical
breezes. And leaves on our palate a memory of carnival and the rainforest. It releases
the most fi ery of desires. Prepared in a short and resistant glass: cut a lime into slices
without removing the skin, add a couple tablespoons of sugar cane. Muddle well, add
a glass of cachaça –sugar cane rum– stir well, and I recommend leaving the mixture
a few minutes. Then add crushed ice. If you substitute the cachaça for white rum,
you will have a Caipiríssima, and if you make it with vodka, a Caipiroska. This is
the favourite drink of the beautiful people of Rio de Janeiro and São Paulo. A good
Caipirinha always has a subtle taste.
